While researching the history of Mother's Day, I was surprised at how far back a celebration for mothers went. Ancient Greeks celebrated a festival to honor Rhea, the mother of all their gods. Early Christians celebrated the Mother's festival on the 4th Sunday of Lent in honor of Mary mother of Jesus. Later one a religious order started including all mothers in that celebration and named it Mothering Sunday. The American Colonist dropped this celebration. They were just too busy trying to establish their settlements and survive.
In 1872 Julia Ward Howe organized a day for mothers dedicated to peace. This was a one time event. It wasn't until 1907 that a Philadelphia school teacher, Anne M. Jarvis, set up a movement for a national Mother's Day. With the help of prominent businessmen, and legislators, her dream came true in 1914 as President Woodrow Wilson proclaimed the second Sunday Jakin in May as our national
Mother's Day in honor of all mothers.
Here is a delicious fruit salad your mother may enjoy
Strawberry Pineapple Salad
1 8ounce package cream cheese, softened
3 tablespoons honey
2 cups strawberries, hulled and crushed
1 cup crushed pineapple, drained
Combine cream cheese and honey in bowl. Add strawberries and pineapple, blend well. Pour into a freeze tray or loaf pan lined with plastic wrap and freeze 2 hours. Cut into 4 portions. Serve on lettuce leaves and garnish with strawberry slices or halves and parsley if desired . Serves 4
